This was supposed to be a Wordless Wednesday, but how mean would I be if I didn’t post the super simple recipe? So, here it is – my “Wordy” Wednesday. Happy baking!
MamaWise’s Best Damn Banana Bread Recipe
- 4 over-ripe bananas (about 2 cups mashed)
- 2 cups flour
- 1 teaspoon baking soda
- 1/4 teaspoon salt
- 1 teaspoon cinnamon
- 1/2 cup butter, softened (you can do 1/2 cup butter + 1/2 cup applesauce instead)
- 2/3 cup brown sugar
- 1 teaspoon vanilla extract
- 2 eggs
- 1 cup chopped/crushed walnuts (optional)
1. Lightly grease a 9×5 inch loaf pan and preheat the oven to 350 degrees.
2. Combine flour, baking soda, salt and cinnamon in a large bowl – set aside. In another bowl, mix the butter (and applesauce if using it) with the brown sugar. Next add eggs, mashed bananas, walnuts (optional) and vanilla extract, mixing thoroughly.
3. Add the wet banana mixture to the dry flour mixture, and mix gently, only until moistened. *NOTE* – don’t overmix unless you like a very dense bread! Pour mixture into greased loaf pan.
4. Bake in preheated oven on center rack for about 6o minutes. The top should be a nice crispy golden brown. Cool for 15 minutes and enjoy!

i have a really easy and really amazing banana bread recipe too. but…i like the sound of this. do you do it with the applesauce? i’m curious as to how that would taste!

This sounds very similar to the recipe my wife uses, and I would step over the corpses of most people on this Earth if that’s what it took to get some.
That’s my way of saying, “Yum! Now all food I eat for the next day or two will taste horribly inferior and inadequate.”

That looks so good. I freeze over-ripe bananas in zip-loc bags so I can make banana bread later. I think I have a bag or two in there now – might have to make this tomorrow.
